The coffee. I've tried a fair amount of aftermarket 64mm(brew,mp,LSv1 and 2, gorillagear, odev2) and fewer 80mm/98mm. I like the coffee off my (wug'd and very well aligned) 80mm Ditting lab sweets (and others Weber ULF) significantly more. I don't know if its a size/grinding path distance thing or not but 98HU is significantly better 64MP despite being the same geometry. Coffee is weird. If p64s were more available at the time I might have gotten stuck with one over the Wug. Zerno was taking money at the time but had not shipped or shown a single unit other than the prototype.

I've been trying to get into pour-overs the last year or two, and I've never managed to get a result I'm perfectly happy with. I'm getting a different monthly light roast from Trade, a KitchenAid grinder I got as a gift, set to anywher between mid-drip setting to an espresso setting (I don't know if the numbers mean anything or correspond to an actual measurement) a ceramic v60 I preheat with steam, some no-name unbleached filters off amazon, and a stovetop gooseneck kettle that I let go to 100C. I use Hoffman's v60 technique, with 12 grounds to 250g of water.
It just comes out muddy and indistinct, I've never gotten a hint of the tasting notes, though sometimes if I forget to finish it, and finish it after its cooled to room temperature, there's some more complex flavors, but also an unpleasant woody taste.
What's the weak link? Me?

Yeah, that explains things. Even on french press settings, there's still grit that gets through, and I gave up using a chemex knock-off with a steel filter because I ended up having to throw away the last couple mouthfuls of the cup because it was full of dust.

Mediums & Lights should be done high temp and finer for the fruit. Go for fermented stuff to be wowed. Play with grind settings. I have more luck with French Press (Hoffmann style) while doing the bloom sequestering (even 1/5 to 1/3 the volume)

I am Canadian, and I thought the listed notes were weird too. I honesty can't tell what they mean by herbal since they're pretty much charred and I don't get many notes beyond that and diner coffee. I'm in the maritimes so local selection is already worse than a lot of places before even factoring decaf, but I forgot how bad it could get. At the very least it's a reminder that I'm not doing a bad job at roasting. I'll probably just not drink coffee for a week or two if I lapse in my roasting cycle again.

forgot i had to grind coarser with these and actually ground finer, which as expected had a super long extraction
tasty coffee tho.
even if i dont use filters on bottom(for whatever reason) i think im converted to using paper filters on top after just 1 shot because the shower screen was perfectly clean(did 1 short flush just in case)
so thats going to massively improve workflow.
also the extraction looked different
less even but more... aerated?
also it looks like it went around the small gap between the bottom filter and the basket because i ground too fine so thats the only place it could get through first
so the usual pre-infusion phase didnt have full basket coverage like it usually does. it then went full coverage as i moved to full flow.
it could be placebo or whatever but the crema looked like it had a finer/tighter bubble structure.
ill pull a few more on the IMS 18g and then ill try the VST 22g.

Salt has been used to roast seeds and nuts for as long as people have been roasting seeds and nuts.
It would be difficult to get all the sand particles out of the cracks in the coffee beans, and sand wouldn't provide much of a benefit in heat distribution over salt.

Rinsing gets rid of most of the salt or sand, but not all of it. What little salt is left will dissolve into the brew, sand wouldn't dissolve and could result in a gritty/muddy mouthfeel. Also, sand may cause tooth erosion and even small particles could damage burrs.

thats the funny thing, there wasn't much retention in the grind chamber but there was probably 0.1-0.2g of coffee inside the front bucket thing after every grind.
like if that just wasn't there and instead you had a small chute like you see on some of the option-o models and a small knocker there would be very little retention.
granted i was not using an oily roast and i was single dosing with rdt, so best case scenario
also i know its an espresso grinder so its designed to be used only for espresso... y'know grind sizes but ANY size even close to what is suitable for moka just sprays out the bottom and goes everywhere.
its unmanageable
like why even have all these grind settings when only a very small amount of them actually have any value.
and i know this is unfair because of the age of the machine and how much wear its had but adjusting the grind size ring is such a fucking pain.
also, question, i was running it and moving it finer to find where the burrs touch, and it would squeal? loudly and then quiet down and then i would move finer again and it would happen again
but i didnt find the actual "chirp" point.
what is the source of this "squeal" when moving finer, like clearly it isnt the burrs touching, and it goes away shorty, i just though it was strange.
and do you think those old springs are usable? if i replaced the burrs should i replace the spring mounts for the top burr/grind adjustment ring too?

If it's not straight-up rust, it doesn't matter. Minor oxidation of the surface isn't going to hurt you. The only reason you should replace them is if they've dulled.

If the process involves fermentation then it definitely can taste straight up like candy - even if you drink it black you'll get a sweetness that's noticeable.

This one smells like the air that gets released when you first open gummy candies. It tastes very light with like, la croix levels of noticing the flavors. I have a feeling I need to grind finer as it was a little watery on this first cup, but it was still alright. Previous years were taste really great once I got them dialed in.

i think its because they grew up drinking bubble tea(milk tea) so when they start drinking coffee they only order very milky coffee
so even an americano would be expected to have milk in the mind of a zoomer
so cafes in zoomer dense areas probably just default to asking if the customer wants milk regardless of the drink

Another roasting attempt. Color came out better and 12 hours after degassing I got a lot of brightness and not too much bitterness- but the benti nenka beans Iβm using are supposed to be sweet and Iβm just not bringing that sweetness out. Gonna try decreasing fan and increasing heat by one after first crack, see if that helps

i finally got those shitty washed burundi beans to taste good
turns out they wanted to go REALLY FINE in my moka(they didnt like being made into a pour over or espresso)
way finer than i usually go
still hollow compared to natural but "good"
AND it was exactly 30g left, so now they are gone
so now the next bag is the "collider" espresso blend from single-o (ETHIOPIA Keffa Natural, BRAZIL Mogiana, PNG Eastern Highlands)
and the bag smells good, thats been a like 3 week rest
and the "Yeehah!" blend i finished last week was really good so i hope this one is too(i never thought i would be into "espresso blends" but for espresso i really like the profile, also the "darker" nature of them makes them easier to dial in and brew)
i also have a washed sumatra and honduras natural that by the time i get to them will be 5 week rest
and a "Ethiopia Lalesa, Natural Heirloom varietals grown in Gedeb, Yirgacheffe at 2,150 MASL." which when i open it will have been rested for 12 weeks(which i think is my longest rest to date)
i also just received hoffmanns new atlas of coffee
and the weather is great
pizza for dinner tonight and espresso after that.
