They simply accomplish different things. If I’m baking chicken breast, I’m not going to cut a hole and put in a clove of garlic. I’d just add some garlic powder to whatever rub I put on it, unless I happen to have some garlic infused butter or oil sitting around.
For, like, sauces and pan stuff and larger cuts of meat yeah go nuts with real garlic and caramelized onions and shit.
