People my parents generation will indeed never bother with spam more than the only time they ate it, nor myself. Spam anything is just inferior to actual ham. If I want a crusty gelatinous thing, I'd seek out some farm-to-table scrapple at a good source. I find the fusion sushi idea still delicious from time to time. I expecially love cuban sushi or peruvian sushi in Miami, where a sweet maduro plantain or roast pork w/guava sauce is hilarious and delicious on top of a ball of rice. It's okay to play with nonsence like sushi.
For OP, though, wouldn't he be better making ahead actual items that are usually made ahead like onigiri, or grilling it like yaki onigiri before consuming.
