This. The left has crispy, butter-browned areas, but is also nice and leavened. The right is uniformly dry and just medium golden brown. I guess I'd eat either if I was hungry enough, but the ones on the left look like the pancakes I grew up on and make to this day.

FIY, in France most people make crêpes using a specialized pan (crêpière), with a very low edge. So you can pour the batter, make it flow around the pan until it is evenly coated, then pour the excess back into the bowl if needed. This way you easily get a thin and round crêpe. However the real pro use a billig and a small rake / spatula to spread the batter. If you can get the right tool you could probably do the same on your griddle. Then your pancakes will be thin enough to qualify as crêpe. But I'm sure those were good regardless of the disapprobation of french snobs :)
