Cut off the root
Make a slit about an inch long in the root end all the way through
Pull it apart in half
Wash it
Wash it again
Wash it some more
Cut up the white part and yellow part
Put them in a bowl and wash them one more time
Put the green parts back in the bag and freeze them, they're only good for making stock
Use them along with, or in place of, onions, they're not typically eaten raw

Slit lengthways, wash thoroughly. Thinly slice. Put in a pan with butter and thyme, season. Stir for a couple of minutes, then cover. Cook for about 15 minutes, stirring once midway. Done.

In some countries they are hilled (repeatedly covered with a mound of earth as they grow), producing long, thin pale stalks which are softer, and can be eaten raw.

I love leeks. Leeks and potato soup is a fucking classic, its also delicious poached in white wine or just sautéed with butter. Serve with white sauce or cheese sauce mmmmm.

Slice the bottom roots and greens off. Cut down the middle but not all the way through, pull open and wash. After washing finish cutting them in half, then make half inch lateral cuts. Boil for 15 minutes.

You can boil the lower half it in buttery water or slice it and use it similar to onions (but they are more mellow/delicate in taste).
Top half boil it in a soup or stew. It goes fantastic in your bouquet garni.

Not op but I've never washed between the leek layers my whole life, I just rinse the outside. But still I use only the white and light green parts which are stuck together, the actual leaves are usually damaged and messed up, or already cut off when I buy them

They make a really excellent side dish just braised in some stock alongside a roast, finished with a dash of cream.
Also you can hide one in someone's kitchen cupboard and tell them there's a huge leek under the sink.

They’re basically the same thing as green onions, but because of their larger size they’re a lot more mild.

They're great grilled/sautéed, but my favorite way to eat them is in soup. Leek and potato soup with a little smoked paprika is incredibly simple and delicious.

They're sandy as beached balls here. I wind up cutting them down into 8ths or whatever, rinsing them in a colander, then putting the whole thing in a (larger) bowl of cold water while I prep everything else.

They're like if onion or scallion decided it was a grass; the green on them is very green tasting. They're great with poultry. They're great in cream soups with a little sautee or char on them. They're great pickled with those little green thai peppers.

I had some with uni at a prominent sushi restaurant, it's actually pretty mid

Cut them on half lengthways then dice them across, you should end up with arc-shaped pieces. I mostly use the white and some of the green, I don't use the real dark green. And of course cut off the root and discard. Take these diced pieces and put them in a big bowl with water and then rub them and pinch them and seperate them with your hands. Leeks have sand, this is how you get rid of it. Once you think the pieces are clean then strain them and there you go. I like to make vichyssoise which is pretty easy but you can make other stuff.

Frizzled leeks, are how I use up the tougher green tops, a great garnish.
