With that loose crumb? I'm going to say you got that pic from a recipe site. I make shit like that all the time and it's perfectly soft. (I don't have a recent crumb pic, I get a better rise these days.) The crust is a little tough, but less then the meat put in it.
Why didn't you take a picture of the shitty bread you had instead of that recipe site pic?
