My favorite barbecue joint is run by two English dudes
It's in the US, though, and they spent a couple of years traveling across the country working with and learning from prominent BBQ places all across the country
Then they spent another year or so putting their business plan together and location-scouting
They picked a location, to turn a phrase, a BBQ desert, and parked their first location across the street for a surprisingly wealthy majority black high school and it took off from there
They opened another location near me probably 20 years ago across the street from my favorite dive bar and I got the backstory from one of the owners getting brickfaced after a double shift and he was like, you guys want some ribs or anything?
We thought he was way drunk because the restaurant closed hours ago then he was like fuck no I own it let's get some ribs
He got a liquor license after that but I like to think he still goes to that dive bar because who wants to drink alone at work
