How do you do the bird?

I always crown the chicken, stuff it with garlic and celery, sew it up, cover in duck fat, salt, pepper, rosemary, roast in Dutch oven at 400

Anyone got any carving tips? I always end up butchering the breast, the skin slips off and a bunch of meat stays on the carcass. Yes I care about presentation.

I haven't cooked a whole bird in a long time, if I do that it's likely getting pulled apart and being made into a sandwich. I just pat some bone in chicken thighs dry if I have any leftover from a recipe, rub olive oil on them and season with salt and pepper, then bake at 400 and they always come out super crispy on the outside and moist on the inside. It's so easy and low effort and tastes better than most high effort meals. All you gotta do is pat em dry and oil em and they come out perfect every time. And it's dirt cheap too, like $2 a lb.

Never heard of it, but my guess is that the steam created by the beer cooks the bird from the inside better compared to no beer and just tighter air cavity, so you're basically cooking the bird in less time. It'd be really crazy if it actually works that way, cause that'd be a huge gamechanger imo.

I'd be wary though, that the skin cavity surrounding the beer can needs to be cut so there's a little gap and the beer isn't air tight gripped by the skin, cause you want some steam to be able to escape.

What the other guys said, and definitely don't sleep on parsnip, it has a very mild sweetness to it. Also herbs and spices can make a lot of difference obviously - I sometimes put turmeric in my chicken soup to give it a more vibrant look and the aroma is nice as well.
