no, stress makes it tough because the muscles are tense and burning up glycogen, the glycogen helps tenderize the meat after slaughter. stress also creates off flavors which would kind of be counter-productive since a lot of chinese cooking involves preparing the meat in a way to make it taste cleaner like boiling it first.
if it does happen it's for bullshit reasons and probably not widespread, or it's just people not giving a shit about the animal rather than because they think it makes anything better. it's not that uncommon for people in the west to think it's okay to mistreat animals sometimes either even if they don't condone outright torture or because they think it makes them taste better. some people just don't give a shit and that's why there are so many laws about how to slaughter an animal in most places.
