as far as i know, light roasts need higher temps (97C)

I'm referring to "brown" as a flavor, not the color of the kombucha. It seemed to strip any notes you'd expect to come through. Didn't try it with any fucked up coferments though.

As you get more familiar with roasting you'll find color is a terrible way to judge a roast. Water loss, bean temperature, time to first crack, and duration of first crack are all far more important. Its pretty easy to roast something that looks like a medium roast that is very underdeveloped or stall out and stale a very light roast.

For me I was drinking 2 cups a day on average before switching but I don't know if 1 cup would have been the same. I'd imagine it varies a lot based on the person. I also didn't feel too bad if I skipped a day, but two I felt a bit off sometimes and at 3-4 days felt kind of like shit.

percolators either make weak unburnt coffee or strong burnt coffee
(moka also functions via percolation but it isnt A percolator as the coffee water doesnt go back over the beans over and over it goes through the beans once and into a separate vessel, but moka coffee can become burnt if you brew it wrong, its not set and forget which is how most people use it which is why it has a bad reputation, like steak would have a bad reputation if 99% of all people just threw it on the grill and burnt it to a crisp, it takes care and attention to cook it correctly)

i put a filter paper into a cylindrical strainer, put it into my cup, and fill it with the water and grounds. the grounds are always submerged until i am ready to drink it. lift the strainer out and let the remaining water drip through. i can gently lift the paper to squeeze it if it is too slow because of too many fines clogging it up

I guess it depends on how low your standards are. Even with a latte but especially with a cortado you are still going to taste the coffee. At the very least you'd still want something roasted recently and not awful quality so I'd say like Happy Mug or S&W are as cheap as I'd go for "good enough" milk based drinks.

i made the french press recently after months of not touching it
it works so well for natural/fermeted coffees, it doesnt work so well for washed/honey
it is a bit stronger, the lack of paper filtration makes the bodier heavier, it is really sweet and boozy with anaerobics, and it doesn't have any silt in my cups (hoffmann recipe)
washed coffees dont work so well since there's a lot of chaff and (i think) washed coffees produce more fines in general
i dont remember liking it so much the last time ive made it, perhaps i used a coffee best suited for filter

Get the darkest drinking chocolate (ie, cocoa + sugar) mix with the least amount of extra ingredients you can find. You need sugar to balance the bitterness of the chocolate + coffee (at least in my opinion) and getting it in the one package makes it less of a fuck about than doing two spoons of cocoa and then more spoons of sugar.
I eventually found a 40% cocoa, 60% sugar mix with no additional ingredients that was in bulk and didn't have a huge markup over the smaller bags of cocoa powder. Alternative buy a bag of cocoa powder and a bag of sugar that's the same amount and mix them in a container.
Use an electric whisk/blender with the coffee shot to mix it well, pour that into the hot milk.

Use a small sifter to put it into the cup, or a plastic fork (I suppose a distribution tool would work great now that I think about it) to mix it up to remove clumps but I don't think it needs to be "prepared".
The grittiness comes from having particles suspended in a liquid. You can't avoid it just by soaking it, but starting by adding a hot liquid to the powder and then mixing it before adding milk (even if the milk is hot), and then continuing to mix it while aerating it is the best way I've found to distribute the particles as widely as possible. Milk is 90% water in the first place, so you're trying to introduce the additional sugar & cocoa particles into the water + fat mixture that is milk.
The dutch process changes the chemical makeup and colour but the physical characteristics of grain size don't change.
