Gyros are the best because they have delicious tzatziki sauce on them and none of that bullshit turks and arabs put on theirs like tomato sauce shit or that condensed milk garbage.

Have you tried it with tiro?
Tirosalata is feta with yogurt and hot peppers chopped up finely, it goes so well on gyro (pork).

Curious what this is called. I've eaten shawarma/donair wraps, never seen anything besides garlic sauce, tzatziki, hummus and hot sauce offered.

Yep, Petritzidis sindagi lol. But with half the sugar and without the syrup (brushed them with butter and little bit of honey instead). Had to buy inferior phyllo because they were out of the good brand but they were delicious.

This looks amazing.
About 20 years ago, I saw the greek equivalent of a "nonna" a "yiayia" giving a small cooking class at the Greek Festival in Miami (St. Sophias). She was discussing her recipe and method for making the spanokopita. She was utterly cute, and a younger person narrated her advice as she made a pan of it to demonstrate, and what blew my mind was that she had about 12 herbs in there. And she didn't know what they were called, she had them in pots since the old country when she emigrated. When I tried a piece, zomg, you need to seek out marjoram, chervil, and lemon balm or whatever else she is tucking in there. It was amazing!

Nice, I also put marjoram, parsley and maybe a little dill, some spring onion, salt and black pep.

That's how my yaya taught me. Maybe next time I'll try with chervil and lemon balm.

I had galactoboureka in a bakery in Bethlehem, in '96. I literally walked across the street with a photographer from my tour just to avoid yet another gift shop stop with the group, lol, and their version of Galactoboureka had just come out of the oven. The soaking liquid had cadamom, and I've never forgotten the flavor.

Well I can't get them here in Bulgaria at least In my city, yes making them yourself is satisfying and you can control the recipe, it called for 300gr of sugar but that seemed too much so I put 150gr. They are not that difficult to make.

Yeah I though that was weird when I found that out. I don't get why they don't have it, if you don't want it just don't buy it, a lot of people eat pork. Muslims can get beef or just go eat your shawarma or whatever.

Just live in a pork country. Here in Germany i've never seen gyros being anything else than pork. If you don't eat pork you have to get a döner where you can usually chose between veal or chicken. Rarely lamb.

This. You'd be surprised how many "Greeks" in the so-called diaspora are really turks. Their counter argument is usually that Americans consider beef or "lamb" a superior meat, but there would be nothing stopping them from offering an alternative "beef gyros", just like how some sandwich shops offer a "chicken cheesesteak". ("Lamb" in quotes because you get a beef-lamb blend at best.) These families have literally pledged allegiance to Istanbul instead of Athens.

Greeks don't eat souvlakis every day. They eat spagetti with mince as a staple. I've also seen them eat small squids with onions which is ok, but not quintessentially greek.
I'm half greek and I think greek food is a little weak apart from souvlaki which is the pinnacle of global cuisine.
You ever have yemista? It's a greek food that looks better than it tastes.
It's roasted vegetables stuffed with rice and other vegetables. It's meant to sound good, but it's too... I don't want to say minty, but I remember it as minty
