That's weird, I checked every butcher with a webpage here when I was processing deer and making sausage, and the ghetto butcher was the only one I could get heaps of beef/pork fat and trim from.
Told me to wait a few hours after they open before I come, cause they need time to get their daily delivery of carcasses and process my order.
Some of the fancy butchers could get me trim, but wanted to charge twice as much, and none of them could supply me with 30lb of fat.
I don't know much about the butcher shop business, but I think all the nice places here get partially processed carcasses, with all the organs and excess fat stripped off at the meat processing plant cause no one in nice neighborhoods buys it.
