They use that excuse for overcooking everything, to justify dishsoap washing their meats, and over-seasoning their food. It's just bullshit shat out to make American's chosen victims feel better about being bred to be retarded manual labour.

That phenomenon still applies if you look at it from a class perspective, if you go to a grocery store in the ghetto and then go to a grocery store in a rich neighborhood you'll see it. Vegetables cost 2x as much and they're all rotten and wilting. Meat might be cheaper but it's so fuckin skeezy you'll want to go vegan. I don't care if it's "USDA approved" I am not eating a ghetto supermarket steak at anything less than well done.

The best butcher in my city is in grocery store in the most ghetto neighborhood. Only one that processes whole animals, so you can get stuff that none of the other butchers carry (like beef hearts, pig skin for cracklin, cuts of fat for sausages, pig heads stuff like that) and they have the best prices by far. The butchers in nice neighborhoods only have regular cuts you can find at Safeway.

They do a ton of volume too cause of their prices, so everything is super fresh. It's ghettofabulous.

I'm not "in town", but same. Best meat market in town is in the ghetto, and it moves. They carry meat from several local ranches, and the prices are ridiculiusly cheap for what they are selling. Specialty cuts as well. If they don't have it they'll order it for you. Itxs been in business for over 120yrs.

That's weird, I checked every butcher with a webpage here when I was processing deer and making sausage, and the ghetto butcher was the only one I could get heaps of beef/pork fat and trim from.

Told me to wait a few hours after they open before I come, cause they need time to get their daily delivery of carcasses and process my order.

Some of the fancy butchers could get me trim, but wanted to charge twice as much, and none of them could supply me with 30lb of fat.

I don't know much about the butcher shop business, but I think all the nice places here get partially processed carcasses, with all the organs and excess fat stripped off at the meat processing plant cause no one in nice neighborhoods buys it.

Not that anon, but my ghetto butcher has been around for 80 years, and the part of town it's in has always been the worst since long before mass migration. It's right by the railway yard and all the WW2 era houses are small and shitty compared to old houses in any other neighborhood.

They use that excuse because cooking a consistent medium rare is too hard for them.
Also they don't grow up so they stick to infantile preferences. When I was a kid I ordered well done TOO, because I hated it when they say "it's medium/medium rare" and they cook steaks even worse than my infantile self at that age, so if I see blatantly raw part I ask for it to be recooked so they hate me /spit in it/make me wait another 15min will I watch everyone else eat.
Those were my reasons.
Now I only order medium rare in a semi fancy place at least, where I KNOW they won't fuck it up. And honestly I prefer to cook my own.

If you overdo that, then the water isn't just sanitized, the water itself becomes a sanitizer that denatures the proteins/flesh cells.
