Can any other high altitude anons give me some general tips on high altitude baking? Does it make that big of a difference? I live at about 7000ft. Just brought home my old stand mixer from my parents and I wanted to bake some cookies tonight.

Air density makes things rise and dry out faster if you don't adjust things.

At 7000 feet, baking changes a little. Add a touch more flour and liquid, use a bit less sugar and baking powder, make the oven a little hotter, and bake for a shorter time. Keep the dough well chilled, mix the butter and sugar gently, and watch the cookies as they brown a bit faster in the lighter air.
