Smiling Friends had a lot of complaints for using the word "Retard" bleeped, South Park had that "Board Girls" episode which also pissed people off. Genuinely promote radical opposition to the powers that be. The ironic bit is that the average person whose idea of edgy humor is slurs or making fun of trannies, can still be trivially offended without even being edgy.

They also will tend to take deep offense if you were to make jokes about their own sacred cows.

Simply being counter to the mainstream won't make you edgy either. If you make your character a honest servant of god who is celibate and this is treated 100% seriously/respectfully, that would go against what's popular in some media (depends on the context), but by its very nature it wouldn't make you edgy at all.
