Let me sum it up, VivziePop is probably the apex creator of 'safe edgy' content but not because she doesn't use slurs.
The Helluva Boss pilot was genuinely edgy. One of the first jokes is killing a literal child for being annoying, you can visibly see the old Newgrounds influence throughout. But as the show goes on, every character progressively has the edge sanded out of them with little rhyme or reason.
In terms of humor, 'safe edgy' isn't just "don't make racial jokes."
How do I put this?
Imagine a plotline where some new video game or toy is coming out and everyone is lined up at some kind of Wal-Mart stand in, within this Wal-Mart stand in we see a cancer patient with his walker, happy that insurance finally approved his medication and as he picks it up, the crowd heading for the new consoomer product, including our main characters indifferently stampedes him.
That is around the line that it feels like safe-edgy isn't allowed to touch these days with humor shows. It's satirical but the joke hinges on letting our main characters be genuine assholes rather than empathetic rebels taking on 'the man'
