Even though you can very loosely say that Engage did sort of bridge that gap with its own gacha slop mechanics, none of the OCs are actually playable in Engage.

And then there's the fact that in the Heroes story it's pretty much entirely a story about OCs heroes fighting the OC villains. Mainline characters are almost exclusively grunts and fodder used to fill out units on the map. None of them actually face the villains or beat them in combat.

The issue isn't necessarily the battleboarding side of things since you can be disingenuous like most battleboarders and use made up terms like 'attack potency' or pretend either of them has real speed feats to say one of them wins.

The issue is the fight animation. Most of Sans' 'attacks' don't really make sense outside the context of an Undertale fight where you control a 2D character in a little box which would be extremely lame to watch. And Judge is even worse because we have actually no animated conception for how he fights. Then there's potential dialogue where Judge's long winded and annoying way of talking does not really fit Death Battle.

I personally feel like the well has been dry for the Zelda cast. Link got a super composite and Tears of the Kingdom didn't afford him much in the way of particularly interesting (for the sake of comparable match ups) techniques.
Zelda herself still basically has zero feats to meaningfully draw from for the format. The upcoming muso game will likely change this, but we'd have to wait for it to make any judgements for potential opponents.
