How do you do homegrown herbs in a hot climate? Lots of things I grow just want to go straight to seed in the summer heat.

Indoors?
Move it to a spot it likes. I put a plant on the south window, if it starts to wilter, i move it away from the direct sun. Simple as.
Outside? You need shade and watering. Do you think plants are complicated?

I'm growing them in shade outdoors and they still want to bolt.

Me growing in cold climate but here goes: most plants you just have to keep removing the flowers/seed pods, chives, basil, thyme, mint comes to mind among what I'm gowing. Buy varieties adapted to your climate, this needs no more than going to physical store, they will have selected them for you or wouldn't be in business for long. Pic related, use light color pots, or shield them with something it really helps.

What are you trying to grow? Most herbs work fine, but I tried coriander last year and it went to seed after 2 weeks

Weed people sometimes set the pots in ice water to cool the soil down. The ice water itself shouldn’t reach the roots tho, more like au bain marie but with cold water. I don’t know if it works with other plants desu

Greenhouse & water. You can even buy small greenhouse kits off Amazon. Plants don't care about heat. They care about moisture, bugs and sunshine.
