Heavy all-out set on monday with 3 sets of heavy tricep extensions/pushdowns for assistance work, heavy 5x5 on wednesday, easy-ish weighted dips on friday. If you do more than 5 reps on monday, increase the weight next week. Increase wednesday weight as you see fit. Take every 4th week off. Once you notice the progress slowing down, switch to triples for the monday set.
This took my OHP max from 75kg to 90kg. Low weight high rep doesn't work for me, only going heavy does. If you're afraid of gaining fat do something else.
