Cholesterol isn't something that needs to be "moderated". It exists in the ideal amounts in natural foods, which are animal foods. The idea of moderating an arbitrary chemical constituent of a natural food to which we are best adapted is so intellectually moronic it's kinda offensive that people repeat that sort of pseudo-expertise. What next, I need to eat "essential fiber" from modern foods for my gut health? So I can walk around with a gassy distended gut? Isn't that what fat diseased government activists also say?

People need to go further than just rejecting government guidelines (which anyone remotely intelligent already does). They need to stop framing foods in terms of calories and macronutrients but instead view them in terms of their quality (ie their wildness) and that extent to which they we are adapted to them. All our nutritional needs take care of themselves if these criteria are met.
