The one I have consistently gives me 30+% fat and 25% muscle, I'm concerned because that's something like a morbidly obese 120kg man would get but I'm only 80kg. ChatGPT said very elderly men will have less than 31% muscle and that's like the diagnosis for sarcopenia.
I also gained around 2kg of pure fat from 1 week going to the gym, that would be over 2000 excess calories a day, I barely eat that much in total.
Is my scale wrong (and how to fix it) or is ChatGPT wrong and these numbers are normal or is my body completely fucked?

If you eat at a slight surplus, say, 200 calories or so, then you'll gain muscle with very little fat. I'm not sure how long you've been cutting, but I wouldn't cut further. If you do, then you'll just end up very barely emaciated, and then when you do start bulking, you'll put on more fat, which will frustrate you, because then you'll have to cut again.

And don't get me started on callouses on the feet, or influences from how much you've sweated that day.
Four point impedance is quite a bit better, but still not nearly as reliable as calipers, btw.
