if you suddenly spike back up/cheat and eat a lot of cals your body will adapt and store said cals to anticipate another long defect.

kinda strange to think that parts of the body are directly opposing each other whilst cutting.

Yes. In the same way that your body makes carbs if you have too little via ketosis, if you give it too few kcals it switches to photosynthesis. You have to spend a lot of time in the sun for it though, as the energy density isn't as great as most foods.
