Well that's objectively untrue given the growth process is massively simplified to muscle stems cells grown in a nutrient rich medium, compared to the natural process that involves whole body metabolism. Structure and composition are approximations of the real deal at best.
And I wouldn't want to to be identical anyways. The nice thing about grown meat, moral considerations aside, is the hypothetical ease of customizing its various nutritional properties. Modern farmed meat generally fucking sucks because it's pumped full of antibiotics to keep alive, has little to no activity which makes it unnaturally fatty, and then it has a very bad o6:03 ratio because its fed an o6 rich o3 poor grain diet. With lab meat, you could hypothetically have it clean and with whatever fat % and micro profile you want. I eat plenty of fish for the o3 DHA/EPA content for example, if they could grow chicken breast that is essentialy like fish in terms of o3 and no mercury content, sign me the fuck up.
