So how did they do it? Clearly people walked around who looked like that, it's not like you can sculpt the exact way a perfectly /fit/ human body would look just out of your imagination, if you never seen it and had to come up with it out of thin air.

There were athletes. They practiced sports like they do. They discovered that big guys lift weights a lot, probably not a surprise at the time since 90% of the population was farmers, lumbers, miners etc. carrying around stuff all day.
