This has been one of my favorites.
I leave out the canned tomatoes.
More Red Bell Peppers.

Looks good. I do an almost similar dish with with added butternut squash, turnips, smoked tofu and textured s o i protein to eat with the vegetarian gf. I also add flour when the onions are done, then add white wine, then vegetables by order of required cooking time. And I don't add water, I prepare a strong aromatics tisane beforehand.

chicken fajitas

2lbs of boneless chicken thighs
3 bell peppers
1 onion
1 can of diced tomatoes
fajita seasoning

Chop bell peppers and onions, add to slow cooker, add chicken thighs, season chicken to your liking, add diced tomatoes. Cook for 7 hours on slow, or 3-4 hours on high. shred chicken with fork after cooking.

You can use fresh tomatoes if you prefer, I used canned for convenience. Very easy recipe to tweak.
