Just got a new cellphone after my LG K20 stopped working after 6 years of loyal service. Got the Samsung s23 because it was another samsung phone.
What did I get?

I asked my friends who had the phone, checked reviews and specs online, talked to the guy at the store
My eyes were peeled for shit like "does it have good storage" or "is the tracking especially intrusive" NOT "does it fucking work does it have basic phone functionalities"
TO TOP IT OFF I can't even get a new LG K20 because the mobile divison of LG got fuckign shut down (probably for refusing to sell out)

Except for no headphone jack, which is a real issue, the rest are all skill issues. If you use newpipe how can you not find some foss offline note taking app or better launcher with easier access to apps? Also, switch to Pipepipe, it supports sponsorblock.
Not sure what you mean by alarm clock but I don't use the stock alarm app.

Headphone jacks being removed from phones have been a topic of smartphone discussion for years now, among multiple other points of contention around the enshittification of phone tech. Just buy a cheap Motorola. Most of the Moto G brand has a jack port, a SD slot and almost zero bloat (for Android standards).

When I click the apk it tells me to download it. Download or cancel. Download and after 10 seconds it opens. Checked downloads and there are not multiple instances of the app. This prompt and download animation still appear if the phone is offline, "download time" is unaffected.
This applies to newpipe and some of the porn games I've transferred from my previous phone.

I use Joplin for my note taking app. My launcher is Nova Launcher which I bought like a decade ago and still use, but looking for FOSS alternatives, try out Lawnchair. It's based on the launcher from AOSP

My piece of shit Pixel never works properly with these. I can't tell if it's just cheap chinkshit adapters or Google fucking with me to make me buy bluetooth earbuds (NOT going to happen).
To top it all off, android doesn't even let you choose which mic you want to use for calls, and when you plug in headphones, it just assumes they have a mic even if they don't.

No headphone jack is a deal breaker for me too, but surely you must have realised that most flagship phones don't come with them anymore? The only new flagship phones I can think of that has headphone jacks are Sony Xperia. Unfortunately I can't buy their phones here.
Flagships are not worth it these days. I've been using the Moto G series of phones for the past 10 years and they're great. Affordable, most have headphone jacks and quite a few have custom ROM support.

I swipe from the bottom to see running apps, swipe down on home screen to see recent, swipe up to see all apps.
Download good lock app from samsung store to configure

I also enabled full screen for firefox with good lock (transparent circle to search thing) and an app called systemui tuner, I have no status bar, literally just site on entire screen, the area with cutout camera included. It mogs iphone in active screen size

First of all.
Always run a debloater to remove questionable software included by the manufacturer (some are there to deliberately slow our phone as it ages to create a demand for newer phones)

Only a few brands still include headphones jacks. I personally like the hardware of XIAOMI (the OS has some very questionable practices, but nothing that can't be fixed).
About apps.
My suggestion is to install F-Droid and look for apps there. They are all free software apps, very light and fast, and I have never seen an ad (this solves the new pipe updater).
