"livedesktop" isos come with a full suite of applications, including shit like libreoffice and multiple browser sometimes
an arch iso is 1.2gb, debian netinstall is 670mb

Debian netinstall is king. You can get any configuration you want out of the box with a minimal and straightforward installer.
