Sad times when all the chink IEM cables are like $40 shipping to US now...feels bad. The basic truth you have to realize first and foremost is that no knife, ever, no matter how expensive, stays sharp forever. The closest to a knife that keeps its edge very long are ceramic knives, but once they inevitably dull they become literal waste.
Instead, accept that you have to maintain your knives - essentially sharpening. This sounds annoying, but once you got the basics down it's relatively easy, and really quick.
A pull through sharpener is the lazy bastard's way out - and it'll at least prevent your knife from utter dullness, though it'll never really get sharp either.
A whetstone is what I'd recommend instead, a little more of a learning curve, but in return you can sharpen your knives to razor sharp within minutes.
Last basics advice: Read and understand the material section in picrel - a harder knife will keep an edge longer, but it will also be harder to sharpen and much easier to chip, requiring a little more finesse in handling. A softer knife is super easy to sharpen and won't chip (the edge may bend though), but in return it loses sharpness quick. More extreme cases within 1-2 meals cooked.
So your to-do is twofold:
- Get yourself a whetstone, if you can't be arsed, get a pull through sharpener. It'll be worse in most ways but you skip the learning curve at least. This part is non-negotiable.
- If you like your old knives just dislike that they are dull, just sharpen them and they'll be good as new. If not, get new ones. Note the shape, size and material for that.

If it doesn't have to be local (so you each have a machine but are still nearby or in a call), then I like the entire genre of "busywork coop", I often play those with friends when we just need an excuse to talk basically.
In that category:
Factorio if you got the giga tism, satisfactory if you got medium tism, the forest if you got no tism. If the tism levels of the players are vastly mismatched, minecraft is great.
Back to local coop though:
Stardew valley is a great pick for playing with most women, as they usually like the art and atmosphere and yet the gameplay loop is addictive without having a big learning curve attached.
Baldur's Gate 3 is also a good choice if they are okay with investing time in a story, and since it's turn based there's not much pressure, plus you can always give advice (just don't be overbearing, give her time to figure stuff out herself). And obviously hype her up for any won fight that was close.
If you want to get her into 3D games but that's too hard, portal 2 has a local coop mode that's pretty fun, just don't steamroll her ahead.

A lot of gaming is pattern recognition, things like understanding where to go, red barrel = explosive, healing items before a room with chest high walls = bossfight, stuff like that. We just didn't notice our learning curve as much because we had it spread out over many years as children.
I still remember the first time I was given a controller (I was a pc player exclusively as a kid) on exchange in another country where we played halo and I still remember thinking "what the actual fuck is this garbage input device" - it's normal it takes a bit to get used to it.
If puzzles are moreso her thing, "human: Fall flat" is an option, used to be popular some years back. Definitely a bit more on the frustrating side though (but with enough charm that you usually don't mind). There's also Unravel Two but I never played that.
Think of it like recommending a book to a friend who rarely reads - you wouldn't give them Dostoevsky, even if you liked him, as a first read. Low frustration level, bait them in with some nice artstyle or interesting visuals, plenty of positive affirmation. You seem like you're on a good path already, just don't force her too much or it'll feel like a chore she has to do for you rather than something she can enjoy herself, that's the idea behind something like stardew valley, it can be a first "oh this is fun" experience.

The advice seems correct, he's a bit autistic about doing it via torso movement, but as long as your wrists are locked it should work either way.
If you have a whetstone rather than a plate, soak it in water for 5 minutes or so until bubbles stop coming out of it.
You can skip the strop step or use an old belt with stropping compound, but stropping is really if you want to be extra and not needed, you can stop before that section and be fine. The important part is the understanding of the burr and why you have to remove it.

TL;DR is they work, but not amazingly. There's like two companies worldwide that have mastered the process of embedding diamond in metal which is the requirement to make these plates have a good longevity, all the others will work similarly well at a fraction of the price (though grit numbers may be wrong) but their longevity isn't great, as they don't do the same process to "merge" the diamonds and the substrate (somewhat simplified but you get the idea).
Honestly given how cheap they are, they are still decent buys though, even if they wear out. I have one in my kitchen that I use for a quick sharpening session, when I just want to sharpen a single knife quickly or something like that. For a proper maintenance day where I do many I still use a whetstone, but not having to soak the plate and it working noticeably faster is nice.
Do get a slightly higher grit than you'd usually use, the sellers often lie and diamond works faster anyways, so a higher grit won't actually feel slower.

besides that's not even the actual point i was making, exercising is mostly about making it a routine, something you do like 5 or 6 days a week, and you have to start from somewhere. "No i have to buy this before i can really start doing x!" is chump mentality, you first get used to the whole thing, drill in your head that you'll spend like an hour or so almost every day on this (which is not easy for most, that's why there's so many chubby and fat people), and only then start thinking about buying tools and whatever else. Again the point is to just start from somewhere, start easy and gradually up the ante and you'll eventually get there, taking all the time you need is fine as long as you don't find excuses to stop completely, even if you have other shit to do during the day for work and whatnot remember that doing something is always better than doing nothing and every (literal) step counts.

Amazingly cutting edge features and willingness to rethink convention but a bit lacking in quality of execution. There's a lot of plastic that doesn't look super premium on that thing and I have questions regarding QC (then again it's preproduction, so that may change).
Cushions are a usual question in terms of longevity, time will tell that, if they aren't breathable that's a dealbreaker for me personally sadly. No tiltlock feels really annoying, but if you can tension it so it takes no force then I guess it's fine, I just find that hard to imagine.
Then again that lumbar support feature looks sick and those pressure sensor readings were impressive.

A dispute lowers your internal user ranking, which will make subsequent disputes harsher and may influence other stuff too. This ranking goes up for buying a lot, not complaining etc. - it's basically a social credit system.
If that score is low enough, they can also ban you from the platform (and a real ban, so not as easy as just switching IP and using a new account).
So they do take action, but only if you're someone who disputes without valid reason suspiciously often.
On the flip side if your user rating is good (mine for example is) disputes basically get approved instantly (sub 30 minutes) without even needing proof.
It's a give and take situation, if you're honest they'll reward you with better customer service, and if you're trying to scam them you get punished.
