This or scoop, I like scoop because of the simple folder structure and the ability to expose your own .exe files that are not in repos

these debloat ISOs are often done by kids with very limited knowledge of what features people use. good way to learn which windows internals you rely on, very bad for a daily driver. run windows 10 LTSC if you need a barebones system.

Scoop is mostly good for small tools like simplewall which use a single folder/file in one place for a config though it can do more stuff than that if you bother but it's not worth it honestly because this is windows we're talking and if something wants to hide a config from you it will
The best option in my opinion is to use scoop for simple tools for portability sake and winget for fat, bloated gui apps like libreoffice, blender, unreal etc.
As for choco it got kind of obsoleted by winget it's main advantage was that it was curated and safe but that is not really a concern nowadays because both winget and scoop pull installers from developer's pages using automatic and public github actions
