The EU is not a singular entitiy. It consists of may people across the full political spectrum. So of course you'll also have your right-wingers who want the people to be fully transparent and be able to break into every device. You're only thinking in 1 dimension (or the "American way" of thinking where only 2 political parties exist). There's a difference between right wing (economic) and right wing (social).
Most Europeans are economically left wing, sure. But a lot of EU is socially right wing nowadays because the EU was fucked by immigration over the past 10 years. So people are mainly looking for political parties which promote nationalism, traditionalism and isolationism which would all be considered "right wing".

Meh, I find it silly that phones are mandated to be tappable, yet commercial internet chat/voice services are not. Same with phone (and devices in general) unlocking, I see no reason why companies shouldn't be mandated to have a way to unlock.

All of this matters very little to the security of their systems. Compared to the on by default backdoor of system updates it's hardly relevant. They have the ability to compromise 99% of their devices with a standard mechanism they use almost every day. Some mechanisms which they only access on court order can be far more secure than that.

For individual paranoid users some security assumptions will be compromised, for the system as used by the vast majority, security is almost unaffected as long as the manufacturers themselves hold the keys.

If you want real security DIY. Commercial consumer shit should be tappable.
