10 LTSC is so old that it is starting to misbehave on certain hardware. For example, display artifacts on certain Intel graphics laptops regardless of whether the Windows Update driver is used or the latest one direct from Intel.
11 LTSC is so stripped down and deviated from regular 11 that by the time you get the stuff you want installed, you might as well just run regular 11. For example, to install winget (for easy package updates) or the new notepad (for dark theme) you have to dick around with pulling dependencies from nuget.org or rg-adguard.net, and even then you might not end up with the latest version of the software you want because only Windows Store can supply the correct set of software. And don't forget to make sure that you install everything system-wide instead of per-user!
I'll take dismissing the occasional Avowed ad over that nightmare any day of the week.

By the way to install winget on LTSC it's as simple as entering wsreset -i in admin powershell to get the store, then installing App Installer from the store

I've never had the wsreset -i command work for me. However, I run extremely hisec firewall configurations, which I suspect is the issue.
Having said that, if you want Windows Store, just run a GAC SKU - half the reason you run LTSC is so you don't have UWP apps running around (that are obvious, anyway: there's still 30-40 UWP apps installed by default on LTSC).

The truth of the matter OP is that you will notice little things over time that make you angry, or frustrate you provided that you actually do things with your computer. You will also be at the mercy of potentially awful ass updates like in it's early stages that saw performance tank, and drivers break.

If you can manage with a previous version well. If you don't see a need to upgrade right away and you don't have issues right now. If you're using an older pc and don't want to take more resources from it. If you're running a server and don't want to reconfigure things when you're fairly sure things will keep running smoothly for a long period of time. If the discontinuation of Windows 10 isn't a problem to you. I'm using Windows 11 tho, not having many issues of note with it, in the end it's up to you.
