Because your PC is able to contain hard drives with many TBs of storage. You can also run complicated automation and library management software to download the things you want as soon as they become available. Personally I like doing things the old fashioned way. I copy movies and shows to USB drives and watch them on my TV with Kodi. But I have Jellyfin set up to download shows my mom likes watching so she can remotely stream them.

A legit use case would be if you are hoarding a bunch of high quality large ass files, say bluray remuxes, and have a GPU in your rig. Jellyfin can use the GPU to transcode it to something more manageable for streaming. The alternative is manually transcoding files like that and copying them to your phone over USB, which takes more time and effort than letting sonarr/radarr manage your library and jellyfin do automatic transcoding.

Only thing I dislike about jellyfin is it doesns't work well with senpwai. It seems to expect you to have a master folder for the anime, and then folders for the seasosn under it. senpwai doesn't do that, and its important to leave things alone so senpwai can track what it has and has not downloaded. The effect in jellyfin is that despite the shows being clearly labled with the seasons, it thinks everything is season 1 and fucks up the metadata too. Very annoying.

Running cloud storage and video streaming has been super fun to figure out and use. Movie streaming is probably the worst value subscription services today too, which helps justify the setup costs.
Jellyfin is pretty good at finding the metadata for movies, but for shows it sucks and grabs the wrong metadata unless you meticulously name each file how jellyfin likes to read it.
If you are too lazy to rename every episode in a series, just change the content type of the folder from TV shows to Home movies or something so it doesn't bother grabbing any metadata for it.
And in your Movies folder, make a seperate folder formatted Name (year) and download the torrent directly into that because some torrented files have weird usernames that make it hard to figure out metadata

I stream from my phone, laptop, TV and when I'm done watching a thing, I delete it from whichever client I'm using and it deletes the relevant files from the server itself, keeping the state of my library up to date for all clients. It also provides a nice interface to browse my shit and keeps track of what has been watched or not, which is a nice quality of life feature when you're dealing with a large library. Basically the whole point is to provide a Netflix-like experience except not relying on globohomo. It's nothing that you couldn't live for, but it's nice to have.

Jellyfin runs on my openwrt router so I don't have to leave my PC on to access my media library.
Put the files on the phone. Infact jellyfin's UI has a download button to put it on your phone for when you leave home, so your PC doesn't need to stay on while you're gone.
