I'm not a gnome user but I was testing out an os last night that shipped with gnome by default and I could minimize them. Grabted I activated an 'extension', not sure what those are desu but it worked afterwards.

gnome works with workspaces, you are not meant to minimize windows, you either close it, change workspace, or alt tab to another window.
minimizing is terrible when you're dealing with more than 2 windows, and it can't really exist without a taskbar that gnome doesn't have.

windows also has a task bar, when you minimize a window you can just reclick it in the bottom. you can't do that on gnome without installing extensions.
minimizing is a terrible inherited habit from windows, alt tabbing, or just selecting your window through the overview is much more efficient, because suddenly you're not micromanaging your window space anymore, and instead of taking 2 steps to change window, you're only taking 1.

What if I just want to hide a window because I don't want to think about it for now? Alt-tabbing will keep everything cluttered. (inb4 usecase)
Also, I'd rather have a task bar that shows me all my open stuff than a "status bar" like my OS is a shitty smartphone.

the gnome workflow is really meant to be focus driven. if you have any kind of adhd it will help you tremendously.
