You want ducted fans, but if this isn't bait, stop before going any further.

If you've never flown before, get a trainer plane to start. Ducted fan planes are hard to fly and have a short battery life. And if you've never built a plane before, go buy an ARF trainer and start there. You want a high-wing prop plane.

Oh, and if you're in the US, it's illegal to build planes now. The government wants you to pay them for a license first, and to install a beacon in your planes as if you're a real pilot.

Depends on the size and weight, but you're going to want to use ducted fans and not real jet engines, unless you're particularly rich. Even with that, you shouldn't start with an f15, as many fighters the f-15 is designed to be inherently unstable and a newbie will struggle to control it.
You should start with either a parasol or a high cantalievered wing trainer so that the plane naturally wants to drop it's center of mass below the wings, thus stabilizing the aircraft.
