I've been delegating work to more junior engineers but they are constantly making mistakes and are still generally clueless and we are supposed to have a highly selective interview process

Inform your manager and suggest some other coding exams for the interviews. Don't just use some random leetcode example. See what they are lacking and make them do it in the interview. If you are the top IT manager, talk to the HR manager instead.
