in countries where govt has taken this control away from the unions, there is plenty of doctors. unfortunatly if a doctor from one of these countries tries to move to one of the former, those same unions get together to say they do not qualify as a doctor here, entirely based around thier desire to maintain restriction on workforce supply and increase thier incomes

That's one of the worst ones. I think the most recent statistics are like 50% of Med School grads can't get into residency and 60% of foreign applicants are accepted. People complain about a doctor shortage constantly, but we don't have one. Hospitals don't want to staff extra people and they want foreign doctors over American ones. Same problem in The UK. They also work you to the bone.

I'm glad I'm over here in code land compare to what I hear from med associates.

Only good doctor job is surgery as it is very high skill and high risk.
Those specialties are always in demand because you have to be extremely meticulous to not fuck it up and very adept to stress.
Those are about the only specialties that pay well. I sometimes dream I went into something like orthopedics, it is a very admirable job at its higher levels.

Watchmaking is seriously oversaturated. And most independent watch makers get their movements from seiko or chinese brands, therefore outsourced. Most are just glorified designers. They don't even know how to make their own movements as that requires very specialized machines which cost hundreds of thousands of dollars to implement.
