Not sure what you mean here. Signal's client is open sauce, but their back end contains proprietary anti-spam measures, since making them FOSS would completely miss a point. Furthermore, Signal itself accepted very few commits from 3rd parties, so it doesn't fully follow that whole philosophy. The fact that you can install apps on Android from 3rd party sources does not come from Android being open source, it just happens that its more convenient to have this feature for the devs.
