For single files just use the text editor with your OS. KWrite on KDE is the best "notepad"-style editor I've seen yet, shit has fucking themes and vim bindings. TextEdit in plaintext mode on MacOS is second. Use Vim in a terminal on any OS (neovim is bloat if you don't need IDE features)
For full documents, programming, IDE, there is Emacs with "evil" extension for vim bindings. It takes a lot of configuring though. If you don't want to configure your editor then use Obsidian. If you are rich then buy iA Writer on Mac App Store.

Yes vim can do it too but it needs a little work.
And the middle click paste is too temporary. Lots of people use the clipboard as a holding zone for a lot of stuff. Like that sticky notes thing windows used to have.

Speaking from experience, if you configure auto copy to clipboard, it'll just clutter it up. Every delete operation in Vim will put the text to your clipboard.

Yes. Basically mandatory if you do this. It saves the 10% useful clipboard stuff you have, the other 90% becomes random letters, words, lines you delete as the day goes on.
Normies just use CTRL+C and CTRL+V. If they lose their clipboard, they don't go through their history, they don't know what a history is. They go back and re-copy it or accept it's lost.

That has happened to me too but I think it was because I was using the lazyvim config. Base nvim doesn't do that, it only copies to clipboard when you explicitly copy. By that I mean right click copy, I don't think even regular yank does it let alone deletes.
Granted I don't use it much but it's convenient sometimes.
