How would you feel when an interviewer says, "If AI can do this in 5 minutes, why would we hire you?"

I was asked this question in a recent interview, and the initial answer I gave didn't seem to convince the interviewer. In the end, I said something like: "I can't compete with AI because it's trained on the entire internet, but what I can do is use it strategically. I've worked in places that strongly encouraged this approach."

Has anyone else been asked this question before? How does one answer without sounding defensive or sarcastic, especially when the tone of the question itself is demeaning?

AI might do this task in 5 minutes, however delivering a good product needs more than that. That's why I'm here, to think a step ahead and provide the shortest way to build a product that will satisfy your clients.

As a dev I spend maybe 20% of my day coding. The rest is clarifying the requirements, chasing after api contracts, writing good and accurate documentation, understanding and fixing obscure bugs etc.

I think this is a good question because it outs retards who think AI is some snake-oil solution that will do their job for them.
How I'd answer it I'd probably something akin to, "While AI has many applications, in my experience it quite often makes mistakes or gets lost in the details when it tries to solve complex problems; in addition, it often goes for the easiest solution to a problem, and that may not be the best. You're right in that AI can do what you would be hiring me to do. However, what I can do more reliably is manage the process of solving the problem using rational thought, memory, applied logic and genuine understanding. Since an AI is only a simulacrum of these things, you'd have to have someone whose job is to check its work. Considering how fast AI can work, it would probably require a team of people just to read and correct its output. Therefore, I posit, that it's actually more cost effective and serves better value to the client, to hire a human to do the AI's job."
