Solid wood desks barely emit any formaldehyde, so if you are really scared, you should get that instead of a particle board desk. In practice, most of the outgassing happens when the desk is new, so you could buy a used desk and it would be fine.

this is based and seems like an easy project with just a buzzsaw and a sander. i have a cheap shitty desk but i was considering just ditching the desktop and then fitting the standing desk component and legs to a piece of wood. just worried it might be too heavy, as id want it way bigger than it is currently. can you buy standing desk motors and shit somewhere?

You probably don't even need to get a full desk, another option is buying a desk stand. Some desks come separate from the surface and you can just use your own surface by finding any piece of wood and drilling the right holes for the stand. So the size of your desk's surface can be whatever size you want and probably cheaper. Even some standing desks like OP's image are like that.
