Whichever one you are more comfortable with. If you're okay with stable distros like Debian then use that, if you're fine with Arch and know how to manage it properly, it's also good. And so on, and so on. Some distros are 100% memes though.

Guile is an easy language to learn if you already know a language like Python or Ruby. It's the Nix-like tooling and concepts that can take a while.
The choice between Nix and Guix is largely about whether you prefer to write a custom language or use a preexisting language that can also be used for other things.

i tried to copy my docker container volumes with a simple volume/* command onto an external ssd, and it quickly ballooned up to 20 times the size of the file. it was putting something into a binary file. anyone know why?

"Distrohopping" is for unemployed people with too much free time they need to fill somehow. So, one of the flavours of LTS Ubuntu or Fedora Workstation, depending on user needs.
