There is a certain amount of monkeytype mastery (like being able to ignore a typo and continue without pausing) that inflates that number. It's not a pure measure of typing skill, I admit.

The only keyboards that haven't fucked my wrists is the most cheapest of cheap logitech. Right now I'm using a K270 because it's wireless. It's only a little worse than the wired version of the K120 which I liked more but...wireless is handy for switching between my mac and windows. I wish they just made a more quality built version of this with the exact same dimensions all around, no fucky built in wrist wrest or anything and with actual bluetooth instead of being tied to its receiver.

The m6 is just like the mx master but it comes with a better sensor with way better polling rate. It does bluetooth, 2.4ghz and wired.
Also they have onboard storage for button macros and a webui to configure the mouse. Logi Options is so shit I'm not even mad about using a webshit configurator.

There's keyboard firmware that can do pointer input. It's usually for trackpads or trackballs but there's a few projects out there with normal mice running QMK/ZMK.

No anon, mouses need microcontrollers to calculate where they were and where they were moved to then convert that information into HID input. Often they need to evaluate all sorts of optical inputs to do this.
Your best bet for a first time custom mouse is to buy an arduino or esp and use an already established mouse.h to drive your optical input. PMW3360 is the most common optical sensor. And Kalith switches are pretty good too. (Pic rel esp32 and kalith switch)
Once you made an esp32 mouse you can move onto more high end microcontrollers that can drive a PAW3395 at like 1000hz

That's not how HID interrupts work. An esp bus runs at 1 ms frames, which means in theory it can run at exactly 1000hz on fs mode, but that will never happen in practice
A teeny 4.0 runs at 125 microframes, which means 8000hz theoretical rate, but in practice you are looking at 4000hz max
