what would you choose and why?
is there a significant difference for home use?
my ISP is 2.5 Gbs fiber

Cat 6A.
LAN should always be 10 Gbit/s.
Do NOT get cat 7 or higher, too expensive, cables are massive, shielding needs to be properly grounded, cat 6A is already 10 Gbit/s anyway.

Be sure your cable is plenum rated!
