Adding a couple of well maintained extensions isn't a bad thing, but fucking around with the theme and adding more obscure extensions is just asking for trouble. Themes are bloat. Just use Open Bar, Auto Accent and Accent Icons, and you have all the colors you want.

The UI style is pretty close to Android, but it doesn't mean it's a tablet UI. Just looking at GNOME I also assumed it would be unusable but now that I've been using it for a few days it's actually pretty good once you add 5 extensions to it. I'm primarily a KDE user btw.
