There are probably some that use some other cloud service but in the end you're relying on a third party server unless you're doing something like selfhosting matrix. Which is actually not a terrible idea if you're after independence from third parties. YOU are responsible for uptime though which sucks.

that's a terrible idea for a mobile device. keeping a connection open to your special snowflake service will kill your battery. both google and apple banned this for apps on their stores.
