Why does it always go with clean, overly descriptive and archetypal usernames like these? I doubt that these are the types of usernames it encountered in its actual training data

Probably because it's basing them off of simulated reddit discussions (which are conducted by researchers picking generic stand-in usernames) as opposed to real reddit usernames. IRL people who simulate reddit discussions are usually marketing people or political focus group types. Or at least that's my best guess.
