Why have small tablets basically died out? 12 years ago we had stuff like the Nexus 7 and it was great.
Nowadays only Apple makes a decently usable small (8 inches or below) tablet, all Android ones have terrible displays and weak specs in general.

It's not phone sized, it's the sweet spot between the size of a regular phone and a regular tablet. It's the best form factor for watching stuff lying on the side in your bed. Phone screens are too small.

My mom does. Mostly to play bridge in front of TV.
She also step on the damn thing, by accident, twice a year on average.
So I can personally vouch that at least two tablets are still bought yearly, at the present time.

Phones got larger. The gap between the two blurred to the point phones and tablets have similar sizes, similar hardware, similar software... There's no divide between them anymore, it's all the same.

Apple and Samsung pretty much won the tablet market. If people wanted to spend more, they might as well get a bigger tablet, they're not going to spend more than $150 on a tablet barely larger than their phone.
The iPad mini is a special case because so many businesses use it as POS machines, restaurant ordering, digital signage, etc. It's a $650 5G iPad vs. $7k for a custom windows system.

I got a shitty 11" lenovo and flashed an open bios to it. It runs Linux mint with 17 hours battery life, all for $130.

They peaked with the Galaxy Tab S2 8.0" in 2015.

I mean, if you're looking for something that can handle more graphically-intense apps or games, I wouldn't recommend this tablet. I don't know how well a 2015-era Snapdragon would handle with those.
But, if you're into using this for media like watching youtube, reading books, or web browsing, it's buttery smooth.
I've suggested this tablet for those who just want to use it for basic things and not spend so much, and it's OLED. (most small tablets today are LCD)

I'm going in a different thought direction here...

People ditched Android tablets because Google fucks you with OS updates and obsoletes your hardware way before it's dead on it's own. People realized this and can't even use updated apps on their obsolete tablet. Case in point is that the Brave browser for example requires Android 10+ to run. Just a few months ago it worked on 7+ and then the fuckers obsoleted all prior versions just because they are too lazy to code for them anymore. And people sure as hell aren't going to get burnt again on the tablet realm. Most people use a laptop for real work. Phones for portability and communication on the go. Tablets are for old people. Kids use dedicated gaming systems for games or desktops/higher end laptops. Tablets were always underpowered for much except to look at porn and play lower quality games.

I'd actually like to get a larger Android tablet but I'd only use it for reading ebooks and guitar stuff on the go.

Phones usually get dropped or the battery goes for shit way before a tablet does. People get new phones when their service provider contracts are up too.

People would rather have a full fledged laptop running whatever OS's you want (including Android if you're a nerd and know what you're doing). Having access to all peripherals and all software is what people are used to. It's not easy to get a tablet to do real serious work and interact with a desktop machine or remote servers.
