I mean, depends on how it’s set up. Is it a file share via smb? Does it host iscsi targets?
If the files are in a regular format you could set up a new server with the same specs but different OS like Debian, log file access for a while, migrate the files, organise a company wide maintenance window, shut down file access, rsync the rest within that window and decommission the Gentoo one.
Then there‘s obviously the question of whether people access it via IP or hostname and how your configs are deployed, so with the file access logs you should see what systems use it where the interesting part happens of seeing what depends on it. Depending on that you could use DNS fuckery, or switch the IP out via GPOs and other automation systems like Ansible/puppet for Linux and if you can’t automate shit there’s a last resort of doing it dirty and reuse the old IP (and either change the old file server‘s IP for the case of for some reason still needing it, and well, you should keep it either way for a bit just in case any way, or some person booting it back up without inquiring first. File servers and IP address conflicts can make a huge mess, any IP address conflict for that matter)
Most configs that you’ll have to migrate should be somewhere in /etc
In case it’s samba, do make sure to check if it’s got LDAP(S) integration and keep firewall rules in mind accordingly if it ends up getting a new IP
