How do you prevent files in your encrypted folder from creating thumbnails or otherwise having metadata stored elsewhere?

You can't.
You're supposed to clean it up afterwards.

If you denounce the Talmud I will tell you

I don't know what that is, but sure, I denounce the Talmud.

The Talmud (/ˈtɑːlmʊd, -məd, ˈtæl-/; Hebrew: תַּלְמוּד, romanized: Talmūḏ, lit.'study, learning, teaching, instruction') is the central text of Rabbinic Judaism second in authority only to the Jewish Bible (Tanakh), whose core is the Torah.[2][3][4] It is the primary source of Jewish religious law (halakha) and Jewish theology.[5][6][7][8]

Now that you know what it is, you denounce it? I'm also going to ask that you denounce the prophet Mohammed too.

Access your sensitive documents in a sandbox, or perhaps VM. Windows Sandbox for instance provides a disposable OS that launches immediately and can be used to mount encrypted volumes. When you close it, everything is destroyed. On windows you could even include portable exes in your encrypted drive for whatever programs you use to access your documents.

Depending on the level of paranoia you require for your operation, a more extreme version would be to use a live USB (something like tails) and boot an OS that never mounts your hard drive.

>today I relapsed again
You just had a lapse, now you are talking to someone about it. You are figuring out what lead to it and will only relapse if you continue to blame yourself or others without addressing the issue at hand.

The real trick is

1) acquire piece of shit laptop off of craiglist for 50 bux
2) remove the hard drive, store it away
3) acquire new usb stick of a size that fits your needs
4) install a live USB on it such as tails
5)go to local cafe with the laptop and your live usb, order a drink and a sandwich
6)connect to the coffee shop's free wifi with said laptop
7)connect to a vpn such as Mullvad
8)start your research or document downloads, store it all on the same live usb (since you don't have internal storage)
9)go home and use / read / enjoy the documents or files you downloaded
10)once finished, destroy and throw away the usb flash drive
11) put old hard drive back on and resell the laptop locally as-is for roughly half the price you paid so it sells fast
12)try to not repeat this process but if you do you know how to do it

or at least that's what an old friend of mine told me he did one time he was curious about some strange government documents and wanted to read them

There are more reasons to require privacy than a sordid hobby. Journalists might have important documents they need to leak, you could be employed for a spy agency, etc.

What OP does is between him and God. Personally I hope he repents and stays away from that. On the other hand, I believe people have a right to privacy, and as a technical issue, ways to reduce your digital footprint are always worth knowing. In some countries, just symbols are a speech from a political leader could land you in trouble with an authoritarian regime.
