I used server 2019 for a bit, ended up going to ltsc since software I used refused to work with a personal licence, drivers were a pain to deal with, and xbox one controller wouldnt work without manually installing some obscure shitty beta drivers

Running Windows Server as a desktop system is nothing new and I used to do it with Server 2003 over Windows XP.
Where you will get screwed is software that requires you to use the Enterprise version on a Server OS (Tree File Size as an example).
