The fashion of the Landsknechte is a case of showing off the personal wealth of the individual in a profession that otherwise allowed for few luxeries and that few survived.
The colorful and bright cloths, the puffed sleeves and hose (which were more difficult to make than simpler cuts and consumed more fabric) all demonstrated that the respective soldier was able to spend much money on his clothing.
This became possible by a decree of Emperor Maximilian I. in 1503, which exempted the Landsknechte from the sumptuary laws that would normally apply to the people of lesser social standing - like soldiers.

I think that hats went out of fashion (not really as there are still many occasions where hats are worn) due to the ubiquity of climate control and that people just spend less time outside.

I really like uniforms with the base color of green. It just looks good and practical.
Pic rel are troops from the german Principality of Anhalt-Köthen. Set in 1813 we have depictions of Volunteer Jäger, who are light infantrymen/sharpshooters, and Landwehr - a militia force meant to augment the regular standing army of a given state. In 1813/14 many german states raised such formations in order to better content with the french - especially the levee en masse and the agressive skirmishing that was pioneered by France.

Pictured here are soldiers from the Free Hanseatic City of Bremen. A firm ally of Prussia, Bremen had de facto given the prussians the control over their military and as such their troops fought in a prussian division that contained the members of the other hanseatic cities and the Grand Duchies of Mecklenburg-Schwerin and Oldenburg.

Pictured here the Freikorps "von Kleist". While most associate this term with the post WW1 veteran and paramilitary forces of Weimar Germany the origin of such formations lays in the 18th century. Here Prussia (and other german states) tried to augment their "rigid" line infantry and cavalry formation with lighter and more flexible troops. The main task of such Freikorps was the small war - i. e. raiding, skirmishing and reconnaissance. In Prussia the main factor for the creation of such forces were the experiences gained against the austrian pandurs (light infantry) and croats (light cavalry) employed during the Silesian Wars. After 1756 many such formations were raised.
Von Kleist distinguished himself in the first year of the Seven Years War during a series of battles that ended with the prussian army retaking the city of Erfurt from a Franco-Austrian force. In 1760 he became the colonel of a Freikorps consisting of Hussars, Dragoons, Light Infantry and Jägers. Due to the noticable green color of their uniforms, he became known as the Green Kleist. During the Battle of Liegnitz his force was instrumental in driving the austrian cavalry off the field. LLater on Kleist raided the area around Erfurt again and in 1762/63 he went on a successful raids against the rich imperial cities of southern Germany - raids which filled the prussian war chest and demonstrated Austrias inability to defend its allies.

Here prussian Fusiliers of the year 1792. While the term of fusilier originally applied to soldiers armed with a flintlock musket (fusil in french), the prussian army fieled flintlocks for all troops since the late 1680s and the line infantry retained the term of Musketeer (Musketier in german) As such Füsiliere were raised as a destinct formations in 1723. Often of lesser quality than the Musketeers they were meant for the second line of battle and garrison duties.
Friedrich II. the Great tried to raise their quality, popularity and function. Thus they recieved a nicer uniform, headgear similar to grenadier caps and their function ought to be that of light infantry. In 1787 the fusilier cap was replaced by the bicorne like Kaskett hat (see pic rel).

Now something unusual: the Grenadier-Jäger-Company von Sell. Raised in 1807 to defend the fortress of Glatz (now Kłodzko in south-western Poland) which was threadend by an army under Jérôme Bonaparte. The prussians held fast and France was unable to occupy the fortress. With the prussian reorganisation of its army in 1808 this formation was merged with other "Glatz fortress units" to form the 2nd Silesian Regiment.

And now the last unit with a pretty green uniform, I'm going to post: the Volunteer Jäger of the prussian 1st Leibhusaren regiment - also knows as the Deaths Head Hussars. As previously mentioned, the volunteer jäger were raised to augment the existing troops with light infantry/cavalry capabilities. As such the cavalry opened their ranks to volunteer from predominantly bourgeois backgrounds.

Most military uniforms of those times were fucking retarded and I genuinely do not understand how anyone thought it was a good idea to play dress up doll with their soldiers. Looking back into antiquity armor was purpose built and where it was decorative, it was still functional, breathable, and sleek. Then everyone got retarded for a few centuries and so we get shit like the pickelhaube or the red coat and le tricorn, then the lead poisoning wears off or something and we start to approach the normalcy we enjoy today.

It is pretty surprising that this era's uniform styles didn't last longer than they did. Apparently, the next step after the Mexican-American War was to deploy with uniforms like these on page 38, going back to taller shako caps before they got lower again during the American Civil War.
